If Panaji were a party, Sarvaa would be that effortlessly cool guest who shows up with just the right vibe. Tucked in a lively corner of Rua de Ourem, Panaji, Sarvaa beckons with a promise of “cuisine sans boundaries.”

From the moment you step inside, Sarvaa’s interiors greet you with a burst of color and character. It’s a space where the walls are a canvas of vivid hues while the lighting is done right and bright. Blue is the reigning hue, but it’s the bursts of color in the décor that really set the tone.
If you want a slightly more lively experience, sit by the bar. For those looking for a hint of privacy and a quieter dining experience without missing the buzz, choose the plush sofa chair seating.

The bar itself, with its striking counter, exudes sophistication while maintaining an air of casual informality. It’s the kind of place where you could easily lose track of time, wrapped up in the good vibes and even better drinks.

The décor is as lively as the motley crowd that drops by—locals, tourists, and everyone in between, all drawn in by the promise of good food, good company, and, of course, the beats from the DJ. The crowd flows in, and it feels like everyone knows everyone. Did we accidentally crash a private party?
The evening kicks off with a Goan Breakfast Martini, which is just as fun as it sounds. A concoction of triphal infused London dry gin, jamun preserve, and edible flower, it’s the kind of cocktail that makes you think, “Why don’t I start all my evenings like this?”

As the DJ spins an eclectic mix of tracks that make you want to linger, the starters arrive. The Veg Koliwada is a revelation—crispy, spicy, and a decent way to begin your meal.

But let’s be honest, it’s the Prawns Pepper Fry that steals the show. Each bite is a perfect harmony of juicy prawns and peppery heat, a dish that’s as bold and lively as the coast itself.

Meanwhile, a glance at the woodfired oven in the corner hints at what’s to come. The Woodfired Flatbread with charred tomatoes, basil, and burrata lands on the table, and it’s competent enough. The flatbread is crisp yet tender, the tomatoes are smoky-sweet, and the burrata is creamy bliss. It’s a dish to devour.

And then, just when you think Sarvaa has shown you all its cards, the vibe shifts as the DJ picks up the pace. The restaurant, now buzzing with energy, feels like a spontaneous party. You’re surrounded by a mix of diners—some vibing to the music, others deep in conversation, but all clearly enjoying every moment.

There are plenty of more gems on the menu to explore, but we’ll save that for another day.
‘Sarvaa’ translates to ‘whole’ in Sanskrit. Well, at the moment we are full. As for ‘whole’ …yes, we’re getting there. Maybe a few more visits will do the trick!
